Food Wise Leeds

The Just One More Campaign 2026 launches with a themed Activity Week from Monday 11 May to Friday 15 May and continues until Friday 26 June 2026.

Now in its fifth year, Just One More is a city-wide campaign encouraging people to add just one more portion of vegetables each day. Small changes like this can make a meaningful difference to health, wellbeing and the environment — and together, we can help inspire those changes across Leeds.

Eating vegetables is essential for good health. They are packed with vitamins, minerals and fibre that support digestion, strengthen the immune system and reduce the risk of long-term health conditions. However, many people still struggle to include vegetables regularly in everyday meals. Vegetables are often seen as expensive, boring or difficult to prepare — especially for families.

The Just One More campaign challenges these perceptions by sharing colourful, tasty and budget-friendly ideas that make vegetables easier and more enjoyable to eat. From quick snacks to family favourites, the campaign focuses on realistic changes that work in everyday life.

Did you know…

  • Only a little over 1 in 3 adults manage to get their 5-a-day—so most of us could do with a vegetable boost!
  • In Leeds, 2 in 3 children and young people are enjoying at least three portions of fruit and veg each day—great progress, but there’s still room for more crunch and colour.
  • Lots of people think fruit is easier to eat than vegetables – but this doesn’t have to be the case!
  • Salad, tomatoes, carrots and peas are the UK’s veggie favourites—they’re the familiar classics that are easy to add onto many plates.
  • The most common way we eat our veg? Mixing them into home-cooked favourites like stir-fries, curries and casseroles.
  • Eating more vegetables doesn’t just help our health—it can also help reduce greenhouse gas emissions, making it a win for us and the planet!

Why vegetables are so important…

  1. Packed with goodness: Veggies are full of essential vitamins and minerals like folate, vitamin C and potassium.
  2. Great for your gut: They’re loaded with fibre, helping keep digestion healthy and preventing constipation.
  3. Boost your long-term health: A fibre-rich diet can help lower the risk of bowel cancer—and veggies also support heart health and reduce the risk of some cancers and strokes.
  4. Part of a balanced diet: Vegetables help us build colourful, nourishing meals that keep us feeling our best.
  5. They’re delicious! With so many flavours, colours and textures to choose from, there’s a vegetable to suit everyone (even the fussy eaters!).

The message is simple:  Add just one more portion of vegetables to your day.

Why not ‘Make a Veg Pledge’

We are inviting individuals, families, workplaces and organisations to take part by making a Veg Pledge via the FoodWise Leeds Veg Pledge Counter: www.foodwiseleeds.org/vegpledge

How we’ll support you:

We’ll be sharing loads of practical tools to make veg-eating exciting and accessible, including:

  • Tasty, budget-friendly recipes
